Manic Monday

Mondays and dinner don’t work for me. We’ve just come off the weekend, so you would think I had time to cook and have a week’s worth of food ready. It just never happens that way. We have dance at dinner time on Mondays and between Girl Scouts, field trips and other needs Tuesday isn’t any better. To make my day less hectic, I have been cooking in the crock pot on Mondays. Last week I put a whole chicken in the crock pot, and we ate off that for three meals.

This week I bought three pounds of hamburger meat on Sunday. I cooked the meat with a chopped onion on the stove. I then divided it in about half.  For dinner on Sunday we had Haystacks. Haystacks are taco meat (hamburger, onions and a taco seasoning packet), rice, crushed Doritos, cheese, sour cream, tomato, lettuce and any other desired taco topping. Traditionally we use white rice, but I used a packet of  Spanish Rice last night.  If I had made more rice it would have extended the meal and we could have another night of it or send it for lunches. I am not going to pretend  they way I made this is good for you. I made a quick meal using a lot of less healthy short cuts. If you make seasoned the taco meat yourself, made whole grain rice and added more vegetables they might not be as bad for you.

Today I am making chili in the crock pot. My chili consists of the hamburger meat with onions, 4 cans of chili beans, 2 cans of diced tomato, and chili powder. This will cook all day in the crock pot. Tonight I will make some cornbread as a side. Here is a recipe from Haute Apple Pie for a similar chili for those of you that need measurements.

Tomorrow I will take some leftover chili and serve it with corn chips, cheese, tomato, lettuce and sour cream like Petro’s Chili and Chips.

If we still have leftovers on Wednesday I will either freeze them for another night or make Chili Pie. The recipe for Chili Pie is found here.

If I had been a better planner, I would have divided the meat in thirds or fourths, added more fillers (beans, rice, or vegetables) and made one or two more meals with my hamburger meat. Spaghetti and Sloppy Joe’s are both easy additions.

Last week we had chicken for three days straight. This week it is beef. A smart mom would freeze one of these dishes to help us not get so sick of the same thing day after day. Maybe next week.
